CONTROLLED APPELLATION
Located at 3 kilometres in the north of Beaune which it borders, Savigny extends out of a large valley that with its many exhibitions and brings a rich remarkable diversity of its wines. The vine of les Guettes, classified Premier Cru is one of the most significant exposures of the appellation because of its southern exposure. It produces some wines characterized by their long guard and the finesse.
LOCAL SOIL
Mainly clay and limestone, the soil is very stony.
WINE-MAKING
Manual harvest-picking. The grapes are sorted in the vineyard and then in the domain on special selection tables. A punching of the cap is done daily and constant temperature control allows the expression of fruit and the future balance of the wine (cold temperature in the 5/6 first days). Fermentation in open vats during 20 days before pressing (pneumatic).
Maturation in oak barrels at 100% with only 10% new oak barrels (from France) and the balance in oaks of one year for 15 months.
CHARACTER AND STYLE
Its colour is a bright brilliant red with black tints. The nose is characterized by aromas of blackberry, cherry kirsch and wild nuances. The palate is lively and accurate with the introduction of the fruit and the soil. On the palate the wine is masculine enough for the appellation. it belongs a real character. The fruit remains on the palate with lots of freshness with a small final delicately spiced final.

Savigny-Les-Beaune is a nice village of the Côte de Beaune near Beaune. The vineyards lie on both sides of a valley. The altitude is between 220 and 360m this vine (about 65 ares) is extraordinary located. The heaviest slopes of the village. Impossible to work with a tractor, all the work is done by hand like in the past…It is a monopoly (Domaine Doudet is the only owner of this parcel) and the name of this vine classified the INAO come from its particularity in slopes. You have always the bottom up !
LOCAL SOIL
The chalk soil is gravely and oriented east/ northeast.
WINE-MAKING
Traditional: Selection of the grapes (pick out by hand) table of selection of each grape by hand. Controlled temperatures (cooling system) de-stemming, with a real wish to let nature made its effects.
Maturation of 13 months in oak barrels from France (Allier and Nevers) 20 % is new oak.
CHARACTER AND STYLE
A shining and limpid pale yellow colour. The nose is really fine and expressive with its mixed aromas: (white fruits, nuts, lemon, and stone.) With its own identity and its interesting balance, the bottle shows a real charisma. On the palate, the wine is lively, fresh and powerful with a really personal character; it cannot leave indifferent. Never over-matured, but rich, well balanced with its delicate richness, a final with a long persistence on the palate shows a real potential for the future.
AGEING AND SERVICE
To keep 5-8 years. Temperature of service: 14°C
An excellent accompaniment for any light dishes: fishes (in sauce after 5 years) all delicatessen, shellfish, and poultry are cooked in cream sauces (after 5 years will be adapted)

Doudet Naudin
Founded in 1849 by Albert Brenot in Savigny-lès-Beaune, Doudet-Naudin is one of the oldest Burgundy wine Maisons. In 1933 it was acquired by the Doudet family, who have developed and expanded the Maison while preserving its fundamental values: respect for traditions and excellence. Christophe Rochet, the current head of Doudet-Naudin, is committed to maintaining the values of this well-respected Maison while restructuring it.
In total 15 appellations are produced, all located around the iconic Corton mountain and the village of Savigny-lès-Beaune. Domaine Isabelle DOUDET has always belonged to the DOUDET family. Today the 13 hectares of this estate are managed by Isabelle, the third generation of this family of wine-growers. Passionate about the vine, Isabelle is also in charge of the winemaking, bringing her talent and a characteristic signature to these superb wines.
The whole Domaine is worked with controlled yields and environmentally-friendly pest management methods. The organic, pesticide-free treatments are reduced to the bare minimum. We practice light ploughing to preserve the overall balance of the vineyard and its ecosystem. The Domaine’s vines tend to be relatively old, up to 70 years old for the oldest! A sign of our rigour and attachment to the vine is the fact that certain plots are, even today, only worked by hand or ploughed with horses.
