Bocchoris Brut Nature Cava
Cava is a sparkling wine of Denominacion de Origen (DO) status from Catalonia. It may be white (blanc) or rose (rosat). The Macabeu, Parellada and Xarel lo are the most popular and traditional grape varieties fro producing cava. Only wines produced in the traditional method may be labelled “cava”, those produced by other produced by other processes may only be called “sparkling wines” (vins escumosos). About 95% of all cava is produced in the Penedes area in Catalonia.
Bocchoris was established in 1918 by the Santacana family, who have been making wine for generations. Their cellar is in the centre of Sant Sadumi d’Anoia and is considered one of the five oldest and most traditional Spanish cellars in existence. This Cava is our very own, exclusive blend. It is aged in the ancient local caves for twenty months before being bottled withouht any additives, including sulphites.
Babot is a fine Brut Nature Cava. It uses the same method of making Champagne to make this high-quality cava. It’s very fresh and floral but very dry at the same time.
AIRE is a collection of Brut Nature Cava and Rose Brut Nature Cava, with a modern and artistic label. Both Brut Nature and Rose Brut Nature are aged in contact with the lees for 40 months in the cellar with regular riddling. The Brut Nature is matured in bottle for around 40 months while Rose Brut NAture is matured in bottle for 22 months. They are cavas at the top quality with defined and sophisticated tastes.
An elegant cava pale straw in colour with golden reflections and bright presence. Integrated and persistent bubbles. Intense and complex aroma in the nose predominated by Xarel-lo. Hints of pastry notes and green apple. Light and fresh on the palate. Balance and good structure.
